These turned out really well. Although the author said she didn't soak the cashews before pulsing them, I soaked mine for 4 hours, and it really helped with the texture. These have just a little bit of sweetness, but we all liked that they weren't the typical sugary key lime pies we are used to. You're not going to fool anyone that this is real cheesecake, but it's a great substitute if you're looking to avoid dairy. I love the walnut crust instead of graham crackers, and I love that you don't have to bake these.
