  • 1 onion (medium, peeled and chopped)
  • 15 ounces corn (with kidney beans and peppers, drained and rinsed)
  • 1 2/3 pounds ground meat (e.g. beef, pork, veal or a mixture)
  • 2 tablespoons breadcrumbs
  • 1 medium egg
  • 1 tablespoon chili paste
  • 1 pound tomatoes (chopped into small chunks)
  • 2 cloves garlic (peeled and finely chopped)
  • 1 bunch cilantro
  • 3 leaves
  • 2 tablespoons olive oil
  • 3 1/2 ounces tortilla chips
  • 2 teaspoons paprika (for dusting)

    Directions

    1. In a bowl, mix the meat, onion, breadcrumbs, canned vegetables, chili paste and egg. Season. Knead the mixture with your hands so it is fully mixed, then divide the mixture into 4 portions. Shape each portion into a small loaf then place on a baking sheet lined with parchment. Roast in a preheated oven at 400°F for 25-45 mins.
    2. To make the salsa, mix the tomatoes, garlic, cilantro and oil in a bowl and season. Serve the meatloaves with the tortilla chips and the salsa on the side. Dust the plate with a little paprika if desired.
