  • 7 tablespoons butter (melted)
  • 3/4 cup self rising flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1/3 cup sugar (plus additional for sprinkling)
  • 1 pound strawberries

    Directions

    1. Preheat the oven to 350°F. Lightly grease eight 2/3-cup ramekins. Place on a baking sheet.
    2. Beat melted butter, flour, baking powder, eggs and sugar in a large bowl with an electric mixer on medium speed until smooth and creamy.
    3. Reserve 4 strawberries for garnish. Hull and quarter the remaining strawberries. Divide among the prepared dishes. Top with batter and sprinkle with additional sugar.
    4. Bake for 15-20 minutes until risen and golden. Halve the reserved strawberries and use to garnish each cake. Serve warm or cold.
