- 1 fennel bulb (small, thinly sliced, about 1.5 cups)
- 2 1/2 lb. mixed mushrooms (thinly sliced, I used a 1 pound button, 1 pound cremini, and a half pound Portobello)
- 1/2 tsp. dried thyme (or 1 tsp fresh thyme)
- 1/3 cup dry sherry
- 2 cups Gruyere cheese (thickly grated)
- 1 cup frozen peas (thawed)
- 2 tsp. salt (plus more to taste)
- 2 tsp. pepper
- 1 egg (beaten, for the egg wash)
