- 2 cups cheddar cheese (grated and divided)
- 4 Tbsp. unsalted butter (melted)
- 4 1/2 cups elbow macaroni (cooked, about 8 ounces uncooked)
- 5.2 oz. garlic and herb cheese (Boursin, or The Laughing Cow Garlic & Herb spreadable cheese)
- 2 Tbsp. unsalted butter (cold)
- 2 large eggs
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 tsp. salt
- 1 pinch red pepper flakes (optional; for a little heat)
- fresh parsley (for garnish, optional)
- 1 lb. boneless pork shoulder roast

- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1 onion (small, chopped)
- 1 garlic clove (minced)
- 28 oz. tomatoes (can whole, or diced, with juice)
- 1 cup red wine
- 5 sprigs fresh thyme
- 5 sprigs fresh oregano
- 1 handful fennel seeds (optional)
- 1 Tbsp. hot sauce (for smokiness, optional)
- fresh parsley (for garnish, optional)
