The taste on these came out fantastic! There was more user error than error with the recipe (my cheesecakes fell horribly) but they taste so good! I didn’t want them super lemony so I just used the 3 tablespoons of fresh lemon juice and it was perfect. To hide my fallen centers (it was my first time making cheesecake), I made a lemon whipped cream which came out sooooo good and was soooo easy that I didn’t even use a recipe. I added a raspberry and strawberry to the tops to make them prettier and give more dimension since the middles are pretty much nonexistent 🙃🙃🙃 but next time, I’ll use the electric mixer for just the cream cheese and then use a spoon to add the rest of the ingredients 🥰🥰🥰

This recipe was my first foray into the world of mini cheesecakes- and it was a big success! After many years of baking traditional size cheesecakes, I purchased a mini pan and loved the ease and greatly reduced time of this mini recipe. If you are a fan of lemon- this is the recipe for you!
