- 2 tsp. baking powder
- 3 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cardamom
- 1 cup coconut sugar
- 3/4 cup coconut oil
- 3 eggs
- 1 cup unsweetened almond milk
- 1 tsp. pure vanilla extract
- 4 medium carrots (grated)
- 1/2 cup walnuts (raw unsalted, chopped)
- 1 1/2 cups shortening (non-hydrogenated palm, I use Spectrum brand)
- 1 cup powdered sugar (I blitzed my own unrefined cane sugar in the blender)
- 2 Tbsp. unsweetened almond milk
- 1 tsp. pure vanilla extract
- sprinkles (Candied Carrot, optional)
- 1 cup cane sugar (unrefined)
- 1 cup water
- 15 baby carrots (or 1-2 peeled carrots)
