    Great recipe for Sunday, making it in double to quadruple batches so you have a quick go to for breakfast on those frantic weekday mornings. I've prepared this recipe a few times and have added in cooked turkey sausage or diced ham, roasted red peppers, onions and all types of different seasonings - onion powder, garlic, cumin, chili powder, etc. I really see the core recipe as a foundation that I can build on. To make it lighter, I use light sour cream and amp up the fiber by using high fiber tortillas. I've found I don't need to double the eggs or sour cream when doubling the batch. The eggs go much further; 24 tortillas filled nicely with 10 eggs and 1/2 cup sour cream.
