  • 1 Tbsp. extra virgin olive oil
  • 1 egg
  • 1 lb. ground chicken breast (or dark meat)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup white onion (diced)
  • 2 cloves garlic (minced)
  • 1 Tbsp. dried oregano
  • 6 fresh basil leaves (torn)
  • 1 pinch salt (and pepper)
  • 16 mozzarella (small, cubes, cut from a block)
  • 2 cups pasta sauce (Muir Glen™ organic Cabernet marinara)
