Description
Meatballs are hearty, rich, and decadent. They also don’t have to be put over spaghetti. This recipe for Mini Chicken Meatballs takes only 30 minutes to prepare. This recipe has them paired with a rich rice pilaf side dish. Feel free to dish these tender morsels up over spaghetti or rice for a decadent dinner. Ingredients

- 600 grams ground chicken
- 1/2 cup oatmeal
- 1 egg
- 500 grams peeled tomatoes (or 4 fresh tomatoes, peeled)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1/2 tsp. pepper
- 1/2 bunch parsley (minced)
- 1/2 cup chicken broth

Directions
- Saute the onion and garlic for 3 minutes on medium heat in a pan with a little olive oil. Add the whole tomatoes, broth, pepper, parsley and salt to taste.
- Blend the mixture for 20 seconds in the blender and return to the pan. Taste to see if more salt is needed and simmer on low heat.
- Mix the chicken with the oatmeal, egg, salt and a dash of pepper in a bowl. Form small balls about the size of a walnut and add them to the pan.
- Cook on low heat, covered, until the meatballs are cooked through, approximately 10 or 15 minutes.
