- 1 lb. apples (peeled, cored and finely chopped*, I used Gingergold)

Very nice, although I used this recipe while incorporating another. Did a pecan/cinnamon/graham crust, layered apple pie filling BEFORE I put cheese cake mixture in, strudel on top mixed w cinnamon & caramel chips. Then when cooling drizzled caramel over. Chilled overnight. Everyone loved! And mine was one full not mini, NOT that the size matters... at least in this it did not. 🥂
