- 1 Tbsp. sugar
- 3/4 tsp. salt
- 10 Tbsp. unsalted butter (chilled, cut into 1/2-inch pieces)
- 1/3 cup vegetable shortening (chilled solid, diced)
- 6 Tbsp. ice water (or more)
- 10 apples (very thinly sliced, I used pink lady apples, but red delicious are fine too Do not peel.)
- 3 Tbsp. lemon juice
- 1/2 cup sugar (more if your apples are super tart)
- 4 Tbsp. corn starch
- 1/4 cup apricot jam (mixed with 1 tablespoon lemon juice)
