- 1 small onion (about 1/3 cup, diced)
- 2 cloves garlic (minced)
- 1 medium carrot (about 1 cup, chopped)
- 1 celery stalk (large, about 1 cup, chopped)
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 3/4 tsp. dried thyme
- 32 oz. diced tomatoes (I usually use fire-roasted or Italian-style)
- 3 Tbsp. tomato paste
- 1 bay leaf
- 1 low sodium vegetable broth (32 oz carton - 4 cups)
- 1 medium zucchini (around 2/3 cups, sliced into halves or quarters)
- 1/4 cup red kidney beans (canned or cooked, drained and rinsed, leave out for paleo & low carb)
- 1/4 cup cannellini beans (canned or cooked, chickpeas OR great northern beans, drained and rinsed, leave out for paleo & low carb)
- water (add only as much as needed to cover vegetables)
- 1/4 cup small shell pasta (dried, use gluten free if necessary, leave out for paleo & low carb and add chopped cauliflower & green beans instead)
- 1 cup baby spinach (fresh, chopped, optional)
- 1 tsp. balsamic vinegar (optional but adds great flavor)
- grated Parmesan cheese (or Shredded, for serving)
- fresh parsley (finely chopped, for garnish, optional)

Delicious! It made such a beautiful soup! I used beef broth instead of vegetable becaise its what I had.

I added more of all the vegetables and noodles. I also added some Italian sausage. It turned out delicious!

Very good- did make some mods. Added more vegetables than it called for as well as seasonings. I added a lot more pasta as well which I ended up adding quite a bit more chicken broth for it too

it was really good. im not a big fan of tomato based soup so i added a cup of heavy cream to give it a richer taste and i also used graded parmesan cheese.

It was delicious. Added a bit more veggies and a can of each of beans. Other than that, followed the recipe and it will definatley be a part of our rotation.

We used a broth from a cioppino we had made. We added crushed tomatoes a potatoe and zucchini along with small pasta shells
It was/is delicious! We served with Parmesan French bread

Converted this to IP. Sauté all the hard vegetables (I add a red pepper, too) for a few minutes, adding generous garlic at the end. I use a bigger onion. Then dump everythjng else in (except chopped spinach and parsley), plus I add a can of tomato sauce and pinch of sugar. I use a couple generous handfuls macaroni noodles, and about half a can each of the cannellini and kidney beans. 5 min high w quick release. Add spinach and parsley at the end. Also hit it w some S and P to taste. Top w Parmesan cheese.

I accidentally put in two tins of chopped tomatoes instead of plain diced tomatoes and it worked fine. I also added a whole chicken stock cube and used a litre of chicken stock instead of vegetable stock, a little sugar and it was delicious!

Turned out great. I used a whole can of each of the beans instead of just 1/4 of a cup. Will make it again. I was also heavy on the spices

Tastes very good, but the amount of beans and pasta are not enough for our taste and also the cooking time is not 30 minutes as is says on the recipe. It took me an hour to cook.

Great soup. Have made many times, always tastes great and is a winner for a healthy mid week meal.

I did substitute greenbeans for the zucchini, and I used cannellini beans only, it was absolutely delicious. Definitely, a truly hearty meal.

This was delicious. I’ve made it several times. I end up putting whole cans of the beans in. It also freezes really well!!!
