- 15 oz. red kidney beans (drained and rinsed)
- 15 oz. cannellini beans (drained and rinsed)

- 4 cups baby spinach (fresh, lightly packed)
- 1 cup uncooked small shell pasta (pasta or medium shells)

I will make this again for sure. I bought a nice quality Parmesan to top it with and it made all the difference.

I made this yesterday and it so delicious. It’s filling and so healthy. I never used Passata before, but it is an essential ingredient for making a rich tomato broth. Will definitely make this again.

Really tasty. I was a little short of veg stock so just added a bit more water . Next time I think I’ll chop the spinach a bit. Just a personal preference. Thanks for the delicious recipe 😊

The author hit this out of the park with this recipe! This is the best minestrone I’ve had! I didn’t have the Passata so I substituted 1 small can of tomato paste. The recipe was simple, yet very tasty. Good mix of spices, veggies, and legumes. I will definitely make this again!

Delicious! I used dry thyme because that’s what I had and added 1lb of Italian sausage. The whole family loved it!

Easy to make and super tasty. As others have mentioned, I didn't find passata so I used regular tomato puree and it turned out great. I followed the instructions exactly and was happy that nothing turned out mushy.

Excellent ! Ya a lot of ingredients but all the spices just make this soup come to life . Delicious !
