    Really tasty. I was a little short of veg stock so just added a bit more water . Next time I think I’ll chop the spinach a bit. Just a personal preference. Thanks for the delicious recipe 😊

    The author hit this out of the park with this recipe! This is the best minestrone I’ve had! I didn’t have the Passata so I substituted 1 small can of tomato paste. The recipe was simple, yet very tasty. Good mix of spices, veggies, and legumes. I will definitely make this again!

    Delicious! I used dry thyme because that’s what I had and added 1lb of Italian sausage. The whole family loved it!

    Easy to make and super tasty. As others have mentioned, I didn't find passata so I used regular tomato puree and it turned out great. I followed the instructions exactly and was happy that nothing turned out mushy.

    Great recipe! I didn’t have the fancy tomato sauce so I just used a can of regular tomato sauce and it was still super tasty!

    Delicious! Definitely make it again. Alot of ingredients but worth the effort. I couldn't get the cento passata sauce so I substituted with a tomato pasta herb sauce, almost like spaghetti sauce, worked great.

    Adjusted the recipe as a main course, for 4 adults: doubled dry spices, water and pasta shells; and used 64oz of beef broth . Great with corn bread as a side.
