It was great! I just added a bit of liquid aminos, white vinegar, balsamic vinegar, and a wee bit more olive oil to really bring out the best of the flavors + brighten them

this is a really good soup. i only made minor changes, i cooked my own beans, didn't use canned. i also used fresh herbs instead if dried. delicious!

This turned out great: it was easy to put together (especially if you do veggie chopping in advance) and absolutely delicious. I’d never been a big all veggie soup person but since switching to a plant based diet, I wanted to give minestrone a try. My family of 4 each devoured 2 large bowls. Will definitely become part of my week night meal rotation.

Very good and super easy to make! I used fresh green beans and a pecorino cheese rind for added flavor. Also grated cheese and ground black pepper for garnish. I didn’t drain the tomatoes as recommended and substituted the juice for part of the water. Delicious! A great basic recipe I will make again.

It was very good and honestly easy to make except I didn’t use any of the spices because I personally don’t like having too many spices so I only added salt and pepper regardless it turned out to be very rich in flavour

It was a hit & added kale in lieu of spinach. Since I ran out of spinach. Great soup on a cold raining night!

Excellent recipe. Just the right amount of everything...except I added 1 cup of pasta instead of 1/2 cup. Thanks for sharing!

This is a wonderful soup. I was a little apprehensive, but the final product was excellent. I recommend highly, you will not be disappointed!

Lovely! I added more veggies and brown elbow macaroni, didn't add black pepper. Still very tasty.

I've made this recipe several times. Great with Grilled Cheese. Highly recommend. 100% vegetarian dish

Awesome! I doubled the seasoning, used 28 oz. of crushed tomatoes, 2 large zucchini, extra veggie broth, and wheat pasta.
