- 150 mL olive oil (plus extra to serve)

- 1 small carrot (cut into 1cm dice)
- 1 celery stalk (cut into 1cm dice)
- 1/2 onion (large, cut into 1cm dice)
- 2 garlic cloves (thinly sliced)
- 1.25 liters vegetable stock
- 400 grams canned tomatoes (blended with 250ml, 1 cup water)
- 1 zucchini (cut into 1cm dice)
- 100 grams macaroni (dried)
- 100 grams green beans (cut into 2cm pieces)
- 100 grams beans (Roman, cut into 2cm pieces)
- 8 cms Parmesan (piece, rind, plus finely grated parmesan to serve)
- 2 thyme sprigs
- 1 fresh bay leaf
- 1 1/2 cups basil (firmly packed, 1 large bunch)
- 1 garlic clove (crushed)
- 100 grams pine nuts
- 150 mL extra-virgin olive oil
- 35 grams grated Parmesan (finely)
- 1/2 lemon
