  • 1/2 cup minced onion (about 1)
  • 1/4 cup zucchini (chopped)
  • 1/4 cup green beans (cut up)
  • 1/4 cup celery (minced, half a stalk)
  • 2 cloves minced garlic
  • 4 cups broth (don't use chicken)
  • 1 1/2 cups hot water
  • 1 can red kidney beans (drained)
  • 1 can small white beans (drained)
  • 1 can chopped tomatoes
  • 1/2 cup carrots (julienned)
  • 2 tablespoons chopped parsley
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon thyme
  • 1 handful spinach (optional)
  • 1/2 cup small shell pasta
  • Parmesan (to top with at end)

    Directions

    1. Sauté onion, celery, garlic, green beans, zucchini until soft,
    2. Add broth, water, tomatoes, beans, carrot, and spices
    3. Bring to boil and simmer for twenty minutes,
    4. Add spinach and pasta and simmer for twenty more minutes
