- 1/2 cup chopped walnuts
- 1/2 cup pineapple (diced canned, drained, I just diced up some canned tidbits)
- 1/2 cup raisins

I love Mimi’s carrot raisin bread. I made muffins and this recipe was good but next time I’ll add a little more sugar, I guess. It was moist and yummy but not as sweet as I remember. Still 5 stars.

The bread turned out great! I use the 9 x 9 and everything came out perfectly. The only thing I would change is I would use crushed pineapple instead of diced pineapple. Also, I'm not a big fan of raisins so I think I would half the amount of raisins and double the amount of walnuts. Will definitely be using this recipe again!
