A copycat recipe that is quite similar to the original. A little less sweet than the original which is perfect for my taste buds :) Don't under-bake or the center will still be a bit mushy! The crispy top is to die for. Make sure to shred the carrots and pineapples very finely or you will taste the individual chunks=not good :(
