- 1 lb. sausage (sweet or spicy Italian Premio, Or your favorite sausage)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 2 sweet onions (medium, I used a red and vidalia onion)
- 2 tsp. minced garlic
- 2 Tbsp. olive oil (add more as needed)
- 1 tsp. oregano
- 1 tsp. basil
- 1/2 tsp. red peppers (crushed)
- 2 idaho potatoes (sliced then halved)
- 1/4 cup vegetable oil
- salt (for taste I used about 1 tsp)
- pepper (for taste I used about 1/2 tsp)
- crusty rolls (optional)
- hoagie rolls (optional)

Very good! Other than par-cooking the sausages on the grill rather than searing them on the stove top and adding about 3/4 of a cup of chicken broth to the seared vegetables and sausages before putting in the oven and baking, I followed all other steps and ingredients. Will absolutely make again. So good for such a simple recipe... with the left over vegetable/chicken broth mixture, I heated up the mixture and links of sausage. Cut up the sausage into bite size pieces topped it on some cooked spaghetti noodles, finally adding freshly grated Parmesan sprinkled with chopped fresh parsley. Throw in a fresh loaf of Italian bread into the oven to warm and crust slightly and suck up all those sweet pepper onion garlicy oil flavors on the bottom of your plate! 😋...an entirely different dish so simple yet so good. Even to make this separate pasta dish fresh, it’s still very simply made.
