Description
This silky, decadent pie is a chocoholic’s dream. The secret ingredient to the oh-so-chocolatey filling? Espresso powder. Adding just a touch doesn’t make the pie taste like coffee, it just enhances that rich flavor. If you want to make chocolate curls to go on top, microwave a 4-ounce bar of semisweet or bittersweet chocolate 10 to 15 seconds to soften it slightly, then set it on a work surface and shave it into curls using a vegetable peeler. Note that the time to make the pie includes 4 3/4 hours to cool and chill. The recipe is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 30 chocolate wafer cookies (such as Famous; 7 oz.)
- 1/3 cup sugar
- 6 Tbsp. salted butter (melted)
- 1/2 cup cornstarch
- 1/2 cup sugar
- 1 tsp. instant espresso powder
- 1/4 tsp. fine sea salt (or table salt)
- 3 large egg yolks
- 8 oz. semisweet chocolate (bars; or bittersweet chocolate if you prefer)
- 1/4 cup salted butter
- 3 cups whole milk
- 2 tsp. vanilla extract
- sweetened whipped cream (from 1 cup whipping cream beaten with 1 Tbsp. sugar; or use whipped topping)
- chocolate curls (or shavings, optional)
Directions
- Preheat oven to 350°F. Whirl chocolate wafers in a food processor until fine crumbs form. Pour crumbs into a bowl, measure 1 1/2 cups, and return them to the food processor. (Save any extra crumbs for other uses.)
- Add 1/3 cup sugar and the melted butter to crumbs. Pulse until mixture resembles slightly wet sand. Press crumbs over the bottom and up the sides of a 9- or 10-inch pie plate, using a dry measuring cup to pack the crumbs.
- Bake crust until set when lightly touched, 10-12 minutes. Remove from oven and let cool completely on a wire rack, about 50 minutes.
