  • 3 ounces rice (cooked cauliflower, with salt added, to taste)
  • 1 tablespoon rice bran oil
  • 1 ounce onion (thinly sliced)
  • 1 teaspoon mild curry paste
  • 1/4 teaspoon Garam Masala
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon minced ginger
  • 1/2 garlic clove (minced)
  • 2 ounces tomato (cut in wedges)
  • 6 ounces lentils

    Directions

    1. Use a small saucepan over medium heat and add the onion, curry paste, garam masala and turmeric. Heat and stir until the onion is starting to brown. Add the ginger, garlic and tomato and cook for about 2 minutes. Add the 6 oz lentils and 1/2 cup of boiling water. Add salt to taste. Bring to the boil and stir often until the juices start to thicken as the lentils are starting to break down. Serve with cauliflower rice.
