- 1 tsp. cumin seeds
- 1/2 tsp. sea salt
- 1 pinch ground cinnamon
- 1/2 cup green lentils (picked through for stones and rinsed)
- 2 3/4 cups boiling water (plus more if needed)
- 1 yellow onions (large or 2 medium, thinly sliced)
- 1/4 cup shelled pistachios (toasted, roughly chopped, you can also use almonds)
- 1 handful golden raisins (or dried currants, optional)
- 1 cup yogurt (unsweetened, vegan or dairy)
- 1 garlic clove (crushed or grated)
- 1 Tbsp. lemon juice (freshly squeezed)
- 1 handful fresh herbs (like mint, basil, or parsley, torn)
- 1 tsp. extra virgin olive oil

It came out delicious! Thanks much!
I had cooked lentils before for another dish. ALso the rice was cooked. Threfore, I caramelized the onions in one pan. In a different pan, I added some diced green beans, wchi I sauteed in olive oil with cumin seeds and raisins. Then, mixed the rice and lentils with onions and the remaining ingredients.

next time i plan to add more spice. and the lentils took longer to cook than normal, i had them on top of the rice.
