- 1/2 tsp. ground cumin
- 1/2 tsp. oregano (Greek)
- 1/2 tsp. dried parsley
- 1/2 tsp. dried mint
- 1 lb. lean ground beef
- 2 tsp. olive oil (plus more as needed)
- 1 onion (small, finely chopped)
- 1/2 cup water
- 2 Tbsp. lemon juice (fresh-squeezed, I use my fresh-frozen lemon juice)
- 3/4 cup chopped fresh mint
- 3/4 fresh parsley
- sliced green onions (thinly, for garnish, optional)
- 6 Tbsp. creamy peanut butter (softened, (see notes))
- 2 Tbsp. sauce (Tahini,(see notes))
- 1/4 cup warm water
- 2 Tbsp. lemon juice (fresh-squeezed)
- 2 tsp. sweetener (granulated Monkfruit)
- 1/2 tsp. garlic (ground, pureed garlic that comes in a jar)
- 4 tsp. soy sauce (gluten-free if needed)
- 3 tsp. Sriracha sauce (to taste, or use another hot sauce of your choice)
- 2 zucchini squash (medium-large, 10-12 inches long)
- 1 Tbsp. olive oil
- 4 cloves garlic (fresh)
- salt
- fresh ground black pepper (to taste to season noodles)
