- 1 1/2 Tbsp. ghee (store-bought or homemade, clarified butter)
- 1 onion (about 1 1/2 cups, thinly sliced)
- 1 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground turmeric
- 1/4 tsp. ground cloves
- 4 skinless chicken thighs (boneless, 1 to 1 1/4 pounds)
- 1 pinch sea salt
- freshly ground black pepper
- 1/2 cup chicken broth (store-bought, or homemade chicken stock)
- 4 cups white rice (cooked grains, such as, brown rice, quinoa or millet)
- 2 Tbsp. fresh lemon juice (or more to taste)
- 1 tsp. grated lemon zest (finely, preferably organic)
- 1/4 cup almonds (hazelnuts, or pistachios, lightly toasted and coarsely chopped)
- 1/4 cup fresh parsley (coarsely chopped)
- 1/3 cup pomegranate seeds (optional but highly recommended)
