- 375 grams wheat flour
- 40 grams sugar
- 15 grams yeast
- salt
- 75 mL milk
- 3 eggs
- 185 grams butter (at room temperature)
- 1 egg yolk (whisked)

Directions
- Preheat the oven to 200 degrees Celsius.
- Mix together the flour, sugar, yeast, salt, milk, and eggs. Knead until the dough is firm and elastic. Add the butter and knead for 10 minutes more by hand (5 if using an electric mixer). Place the dough into a covered bowl and refrigerate overnight.
- Remove the dough from the refrigerator and form into balls of about 60 grams each. Place the balls into a pan, leaving space between them. Cover and set aside for 90 minutes.
- Brush with egg yolk and bake the brioche for 20 minutes.
