- 1 yellow onion (large, 220g finely chopped)

- 1 medium carrot (80g peeled and finely chopped)
- 1 stalk celery (chopped)
- 1 seeds (red jalapeno pepper, and pith removed and finely chopped)
- 1 clove garlic (or two small ones minced)
- 1/2 Tbsp. dried oregano
- 1 tsp. coriander (dried)
- 1 tsp. cumin
- 1/2 tsp. smoked paprika
- 400 grams chopped tomatoes (tins of)
- 1 courgette (small, 180g cut in half lengthways then sliced diagonally)
- 1 green bell pepper (180g pith and seeds removed and roughly chopped)
- 1 pepper (orange sweet, romano pepper pith and seeds removed and roughly chopped)
- 140 grams sweetcorn (kernels)
- 400 grams black beans (drained and rinsed)
- 1 handful fresh coriander (chopped)
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 2 Tbsp. lime juice (freshly squeezed)
