- 15.5 oz. kidney beans (drained)
- 15.25 oz. corn kernels (drained)
- 1 cup taco sauce (medium heat, or 1, 14-oz can stewed or fire roasted tomatoes)
- 1 cup prepared salsa
- 1 cup red onion (chopped)
- 1 red bell pepper (cut into 1/4-inch dice)
- 1 lime
- 1 Tbsp. minced garlic
- 2 tsp. chili powder
- 2 tsp. ground cumin
- ground black pepper
- salt
- jalapeno peppers (Jarred, sliced, if using)
- 6 oz. jack cheese (grated Monterrey)
- 6 oz. sharp cheddar cheese (grated)
- 1 cup sour cream (or plain Greek yogurt)
- 2 scallions (finely chopped)
