Easy & good side dish for enchiladas. Since it’s summer, I substituted 2 fresh tomatoes for the canned. Made enough for 6 large servings

I would like a little more flavor but I put it inside tortilla shells and broiled them. Very good

Tastes delicious but doesn’t need that much oil or salt. Next time trying 1/3 of the recommendation of each.

wayyyyyyy too salty, and i even put less in than it called for. but still pretty tasty, just needed a big glass of water to drink with it haha kids ate it too.

Turned out awesome! Great flavor with just the right amount of spice and zest. served with a lottle chicken in a bowl for a great right sized meal.

Made with brown rice. Taste’s great, but added cayenne for extra bite. Really good with corn bread. Will use fresh cilantro next time as well.
