Made this by precooking in the microwave and finished over the coals instead of in the oven. Also used fresh garlic instead of powder in the mayo. It was AMAZING and everybody loved it!! Will definitely be adding it as a barbecue side in the future!!

I took the silver queen corn off the cob and warmed it over the stove with a pat of butter. Then I swirled in the spiced mayo and extra cilantro. We both snarfed down the entire thing. So good, I totally forgot about the cheese. And that never happens. Ever.

This has become the number one snack in my house! I adjust the mayo paste by adding more garlic powder, adding chili powder and cayenne (we like it spicy). Either way, I'm so glad I came across this recipe!

very good instead of cotija use mexican cream or daisy cream use parmasion cheese sprinkled over. I would do it again
