Very tasty and super easy recipe! I cut the red onion by a half or would maybe add another cup or two of corn (I loveeeee corn) to balance it out. Dressing is delicious!

This is such a delicious summer salad. It goes wonderfully with chicken tacos. I think grilling fresh corn is imperative. We used 5 cobs in total. We also didnt have plain mayonnaise on hand so we used Chipotle mayo instead. It was a huge hit, with no leftovers between 4 people.
