    I opted to add 1/4 c applesauce to prevent the dryness mentioned in a comment. This alteration made it slightly more dense and super soft fresh from the oven. Great with caramel ice cream!!

    Great easy way to spice up boring corn. I used frozen corn instead of canned, worked out just fine. This is an easy recipe for a side when you’re tired of rice/beans

    Crowd pleaser! Served with street tacos. I used canned corn but would be great with fresh grilled corn. I also used feta as that is what I had on hand. Flexible recipe and bursting with flavor!

    Very simple which is why I went with it and super easy to make. Would recommend. Can even add whatever you want like avacado or tomatoes if you want too throw in other flavors. Great side for almost any meal.
