Really yummy dish! I used frozen (thawed and drained) corn and cooked it in a regular pan rather than a cast iron and the corn still browned really nicely. It also cooked in just a few minutes..didn't take as long as the recipe calls for. I also used a couple more tablespoons cilantro because I like it!

Excellent! Used fresh corn but had to use dried cilantro and it was still great. It was a little wet so I’d probably go lighter in the mayonnaise and sour cream next time
