Great way to use up our leftover potatoes-- I was looking for this recipe a few weeks later and completely forgot I saved it to this app xDD I am so happy I did, it was so easy and delicious.

Very yummy, kids gobbled this up! added tomato, sour cream, olives and avocado. Also used hash browns to save time.
