- 1 yellow onion (medium, diced)

- 1 jalapeno (seeded and diced, leave seeds in for extra spicy risotto)

- 1/4 tsp. cayenne pepper (depending on how spicy you want it)
- 2 ears sweet corn (fresh, kernels removed, or 2 cups frozen corn)
- 1/4 cup chopped cilantro (fresh, plus more for garnish)
- 1 cup grated cotija cheese (plus more for garnish)
