Made double the portion. It came out really well. I believe I followed the recipe almost exactly. I used olive oil instead of avocado and I added much more salt than what it called for. It brought out the flavor. I made guacamole to go with this and it was a hit. (I did leave out the jalapeños though)

Took a little longer than 30 minutes but this was a great dish and I plan to make it again!

Prep time took me longer than 7 min, and I decided to add some grilled corn and chicken to it but otherwise was super easy and tasty!

It was very good but a little bland. I would up the spices a bit next time and perhaps serve with extra lime juice. The entire family liked it very much, though, so I will definitely give it another shot

It was wonderful! I kept the recipe the same, but we added guacamole and some lime Tostitos chips.

Delicious! I tweaked the recipe, adding frozen chopped peppers, frozen corn instead of jalapeño, and chili powder instead of taco seasoning. I added paprika, turmeric and garlic. Served it over tortilla chips and shredded cheddar...so good!!

I made a few replacements: no jalapenos, used cooking spray, and carrots instead of one of the peppers. Still came out great.

Made this last night. Turned out great...added extra taco seasoning and lime juice during the last stir. Had it for lunch today and the flavors were vibrant.

It turned out ok, but wasn’t the greatest. Would probably be better with fresh cilantro. No one else liked it much.

Takes a lot longer to cook the quinoa than they suggest but always turns out 10/10. I add corn and alot of cumin to mine to mix it up

So good! Easy to make. I used my own spices and cooked it for longer. A great dish!
