The ratio of polenta to water was way off so i dont know how 1 cup was enough. i used 1 TUBE of polenta and 4 cups of water and that eventually worked out. Still had to cook it on med-high to reduce it quite a bit more. Delicious in the end!

I had to use roma tomato's that I cut into chunks. I cooked them for 1 or 2 min. I put the whole thing on the polenta and put a bunch of cheese on top and am baking it, now. It smells great! It was soooo good! Even the kids loved it!
