- 1 1/2 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 4 cloves garlic (pressed through garlic press)
- 3 Tbsp. diced green chilies (heaping, I used hot, but feel free to use mild)
- 2 Tbsp. tomato paste (heaping)
- 29 oz. fire roasted tomatoes (crushed)
- 2 Tbsp. chopped cilantro (plus extra leaves for garnish)
- 12 lasagna noodles (cooked according to package instructions)
- 15 oz. black beans (drained and rinsed)
- 15 oz. corn kernels (drained and rinsed)
- 4 cups shredded Mexican cheese blend
- 1 Tbsp. green onions (chopped)

Delicious. I would definitely make it again. tastes even better the next day.

The whole family loved it. It takes a bit of planning, definitely not a one-pot dish. I might add mors sauce and ground beef next time.
