- 8 eggs (beaten)
- 1 cup shredded cheese (Mexican)
- 1/2 red pepper (diced and 2 ring slices)
- 1/2 green pepper (diced and 2 ring slices)
- 1/3 red onion (diced)
- 2 cups fresh spinach
- 2 Tbsp. butter
- 1 Tbsp. grape seed oil
- 2 tsp. chili pepper (aleppo)
- 2 tsp. smoked paprika
- 1 tsp. garlic powder
- pepper (slat &, to taste)

Directions
- Melt the butter in a cast iron skillet on medium heat.
- Add the onions and cook until they begin to soften, about 5 minutes.
- Add the peppers 2 minutes into the cooking of the onions.
