This was very good. I didn't have fresh corn so I used canned. I also didn't have cotija cheese so I used Kraft grated Mexican 4-cheese blend. I'm sure the use of the proper ingredients would have made this even better......but it was very tasty anyway. I served this with Taco Casserole that I found on this site. Will definitely make this again!
