- 2 chicken breasts boneless (and skinless chopped into 1 inch size pieces)
- 1 cup white rice (Basmati, you can use any kind of rice you prefer, note: my directions use Basmati Rice and I cooked it via the instructions on the package. This equals 3 cups cooked rice.)
- 1 1/2 cups chicken broth
- 16 oz. medium salsa (about 1½ cups You can use a more mild Salsa or more spicy, depending on what you prefer.)
- 1 cup frozen corn
- 15 oz. black beans (drained and rinsed)
- 1/4 cup fresh cilantro (chopped)
- 1/2 tsp. cumin powder
- 1/2 tsp. chili powder
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- 1 1/4 cups chedder cheese (Mexican)
- 2 Tbsp. coconut oil
- 1 avocado (pitted, skin removed and diced)
- 1 tomato (diced)
- 1 lime (cut into wedges)

Turned out great when I made it. Easy to substitute meat for vegans/vegetarians. makes a lot and you can adjust the ingredients as you prefer.

This was so delicious and flavorful. I added a canned of green chilies to add a little more spice. So delicious, will use this recipe again!

instead of chicken and black beans we used bush's chili beans (rinsed)and added taco seaoning with hb meat it was so good. making burritos with leftovers

Super easy and so Delicious and you can add or substitute ingredients as you see fit. Can’t go wrong. My entire family loved it

This turned out great. I substituted chicken chorizo sausage and added some sautéed veggies. Delish! It helped that I used some homemade adobo for bit of smokey and spice.
