  • 2 chicken breasts boneless (and skinless chopped into 1 inch size pieces)
  • 1 cup white rice (Basmati, you can use any kind of rice you prefer, note: my directions use Basmati Rice and I cooked it via the instructions on the package. This equals 3 cups cooked rice.)
  • 1 1/2 cups chicken broth
  • 16 ounces medium salsa (about 1½ cups You can use a more mild Salsa or more spicy, depending on what you prefer.)
  • 1 cup frozen corn
  • 15 ounces black beans (drained and rinsed)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 1/4 cups chedder cheese (Mexican)
  • 2 tablespoons coconut oil
  • 1 avocado (pitted, skin removed and diced)
  • 1 tomato (diced)
  • 1 lime (cut into wedges)

    Great, I loved adding diced avocado and tomato on top of mine. We also added some sour cream on the side. I even got the kids to eat it #win I also didn’t add lime or cilantro as I don’t like them.

    Super easy and so Delicious and you can add or substitute ingredients as you see fit. Can’t go wrong. My entire family loved it

    This turned out great. I substituted chicken chorizo sausage and added some sautéed veggies. Delish! It helped that I used some homemade adobo for bit of smokey and spice.
