- 1 cup frozen corn (or fresh)
- 1/4 cup fresh cilantro (or parsley, chopped, plus extra for garnish)

It was ok. I used a Queso cheese instead of cheddar, that was a mistake as this recipe needs the flavor a good cheddar brings. Doubled the tortillas and still could have used more. I prefer the casserole version and wouldn’t make this one again. It turned pink with the tomatoes so not really appealing.

Yummly Awesome!! I made changes — omitted the flour, chicken broth, cream cheese. I used chunky salsa instead of Rotel but will use Rotel next time. I used flour tortillas because that’s what I had in the house. I added garlic chili powder with the cumin. It was soooo good especially the leftovers.

Well-received...my family thought it was a more complex take on nachos. The cream cheese really adds nice texture; the final broil crisped up the torn tortillas perfectly. I didn’t have jalapeño so chopped up 2 canned peppers in adobo sauce. Garnished w a handful of green onion tops. Took a little longer to prepare than I expected; will add more corn next time since we are big corn fans.
