- 1 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 lb. boneless skinless chicken breasts (cut into bite-size pieces, about 2 large breasts)
- 1 Tbsp. chili powder (plus 2 teaspoons)
- 1 1/2 tsp. ground cumin
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 1 tsp. minced garlic
- 2 cloves
- 1 can fire-roasted diced tomatoes (15 ounces well drained)
- 1 can black beans (15 ounces, rinsed and drained)
- 1 cup plain greek yogurt
- 1/2 cup grated sharp cheddar cheese (freshly, divided)
- 1/2 cup grated mozzarella cheese (freshly, divided)
- fresh cilantro (for serving)

Excellent. A little labor intensive on the front end for a casserole— but very tasty.

These flavors stand on their own! I cooked the recipe as written, with these exceptions:
- I cooked my quinoa in low-sodium chicken broth.
- I cooked the chicken an additional 10 minutes which caused the peppers and onion to cook down more than I would’ve liked (creating more liquid). As a result, I didn't use yogurt as the dish was wet enough without it.
Overall, the dish tasted really good. Next time, I will cook without the chicken for a meatless option.

soo good. Used ground chicken. Just like our stuffed pepper recipe, but without the pepper.

Very tasty we cooked it Saturday night and recorded it the next day in a slow cooker for a church pot luck

DO NOT BAKE! There’s just no point and it wastes time. The rest of the recipe was pretty good for making a burrito bowl. I added a can of kidney beans and corn.

This recipe came out perfect! I used the exact ingredients and love this one. This is a good potluck dish because it is different but has a lot of flavor. Will definitely make again.

this is a staple in my household. i skip the cayenne pepper because my girlfriend is sensitivr to it and add a can of fire roasted rotel. love it!

A new family favorite! Loved it and so did my kids. The only thing I changed was not putting in the yogurt. Next time I will try it with the yogurt.

My first time trying quinoa. Turned out great with a nice kick. My wife loves spicy foods so I’m sure we will be making this again.

So easy to make! I cut the recipe in half and added corn and green chilies.... perfect dinner, and great leftovers for lunch during the week.

I replaced the black beans with pinto beans and added chili beans for more fiber content ...used half quinoa, half brown rice. My daughter and husband loved it, my granddaughter even liked and she doesn't like spicy foods.

Wonderful i cut the hot spices in half fot the wimps in the family and left beans out for my wife and they still loved it :)

I made this tonight. It was alright. I thought it needed hot sauce to make it more edible but it was fine without it. My wife enjoyed it.

very good but a little to spicy next time i should add less pillipilli (did not have chilli powder)
