This turned really delicious. I’ve been trying not to eat carbs so thought I’d give this a try. Am I glad I did. I didn’t have fresh cauliflower so used I bag of cauliflower rice. Followed the rest of the recipe as written although I did add the salsa early, covered and let it simmer on low for about 10 minutes. Squeezed fresh lime and cilantro over top. Husband even loved it.
