- 300 grams beef mince (good quality, (if possible get ground chuck steak). If getting from a supermarket, avoid the lean mince as the fat is where the flavours at!)
- 6 slices pancetta (these should be wafer thin)
- 2 tsp. chipotle paste (heaped )
- 2 rolls (Soft white, we prefer this over the popular brioche bun, but use whatever floats your boat; just make sure they’re as fresh as possible)
- 2 gherkins (Large)
- 1 tomato (Large, ripe)
- 1 baby gem lettuce
- 4 slices cheese (burger, we prefer the ‘plastic’ stuff to fancy cheddar, but once again, do what makes you happy)
- 2 Tbsp. chipotle mayo
- 2 Tbsp. ketchup ( Chipotle)
- salt
- pepper
- serrano chiles
