I love this recipe! Instead of chicken, I used chick peas. Great vegetarian version, added cilantro and sour cream. My kids put it in corn shells with lettuce.

This was very tasty but I didnt really see it as a main meal. Its very mushy, and needs a crunch factor. It would be great with some Tostadas or Doritos!

Awesome! Added 1/3 to all to fir a 9x12 pan. Also used mild salsa rather than enchalada sauce. Added diced green onions to the green peppers too.

This was a hit. I made some adjustments according to what I had on hand.. I had some leftover grilled elk that I used instead of chicken. I used green chili enchilada sauce (1 can) and the whole can of refried beans. I added 1/2 chopped onion and some garlic. Then, I added some taco seasoning and salt to taste

My kids do not like things too spicy so I left out the chili flakes. I made my own enchilada sauce. My kids went back for seconds. I will make this again.

Kinda bland and I wish I didn’t put it in the broiler- it burned the cheese

I mixed in some jalapeños and green onion as well... the whole family enjoyed it. I will definitely make it again.

This recipe is delicious! I will definitely make it again. I made my own Enchilada sauce from scratch because all the pre-made sauces have cornstarch in them and I have a sensitivity to corn so i used almond flour instead.

I added more sauce on top before the cheese, poblano and jalapeno peppers and olives. It turned out pretty good.

This turned out fantastic I used red enchilada sauce and added a little bit of Cholula hot sauce and it turned out amazing. It is very easy to make and tastes wonderful.

Very good! I’m going to substitute the brown rice with quinoa the next time I make it. I hope it turns out as good.

I made this for my kids and they loved it! I substituted the brown rice for Spanish rice and seasoned/baked the chicken. I added a bit extra of all ingredients when mixing together.
I don’t eat meat and was bummed to miss out because it looked so good!

So yummy and easy. Subbed ground turkey for the chicken and green onions for the green peppers. Topped with salsa. So good!

It was delish, but I didn't have any chicken cooked up, so I quickly cooked up some ground turkey and whipped it together and it turned it perfect! It was super easy to put together and my husband enjoyed it! We ate it with tostito scoops and scooped it like a dip!!

I make this often, it’s great because you can prepare ahead of time. My whole family loves it. I add extra enchilada sauce (otherwise it’s too dry), corn, cumin powder (for more flavour), use red caps instead of green and poach the chicken.

I would’ve liked it more if I had added more chicken I think, but it was a great dish!

It was good though my family didn’t eat much. I followed the recipe exactly with the exception of switching out the chicken with ground turkey I’m not sure if that is what caused it to be fairly bland or what. I’m going to try adding more seasonings, onions, and black beans next time.

I cooked the chicken with salt, pepper, garlic, and olive oil before shredding. I added extra kidney beans (would have preferred black beans but that's all I had) and onions. Left out the peppers because I didn't have any. We all loved it and will make again! Great flavor!
