  • 1 pound ground beef
  • 1 onion (chopped)
  • 1 ounce taco seasoning mix
  • 1 red chili (long, deseeded, chopped)
  • 1 tablespoon vegetable oil
  • 1 avocado (pitted, peeled, chopped)
  • 1/3 cup sour cream
  • 1 tablespoon fresh cilantro (chopped)
  • 4 burger buns (toasted)
  • 4 tablespoons tomato salsa
  • 1 cup baby arugula

    Directions

    1. For the burgers, combine ground beef, onion, taco seasoning and chili. Shape into 4 patties. Heat oil in a large frying pan over medium heat. Cook burgers for 4-5 mins per side, or until cooked to your liking.
    2. Meanwhile, for the avocado spread, combine avocado, sour cream and cilantro. Season. Spread over bottom buns. Top with a burger, salsa and arugula. Sandwich together with top buns. Serve.
