- 1/2 cup butter (room temperature)
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 1/2 cups all purpose flour (sifted)
- 1 Tbsp. all purpose flour (to coat berries with)
- 1 tsp. baking powder
- 1/3 cup milk
- 1 1/2 cups blueberries (fresh or frozen unthawed)

Absolutely perfect I managed to get my hands on a special bunch of extra-sweet blueberries which made this cake taste oh so good! It reminds me of a moister coffee cake The method of folding the egg whites adds extra fluffiness to the cake. Do yourself a favor and make sure to use fresh squeezed lemon juice for the glaze Cake would great for a brunch or just that sweet tooth mid-week craving.

Melt in your mouth! I used becel vegan margarine. Excellent result....I was surprised as I usually use butter.

This was so delicious! Just right! We made this Sunday and its going in my recipe file. We didn’t change anything. Just used frozen blueberries instead of fresh and it worked perfect; and also we found that letting the lemon glaze soak into the cake for just a little while before eating it was the way to go. Or the lemon glaze could be overpowering.

I was nervous about how this would come out! I made this recipe in a 12X8 pan instead of 8X8, baked it for 40 minutes, and this came out amazing! Fresh blueberries are recommended, enjoy!

My only modification was mixing lemon zest with the sugar. Turned out wonderful

My husband’s family really enjoyed this recipe! I thought it was delicious too. I doubled it to fit a 13x9 pan and everything turned out great. I just had to tweak the lemon glaze a bit (added a little more sugar to the mixture and also sprinkled some extra sugar on top) Yummy!
