- 1 melon (medium)
- 1/2 preserved lemon (rind of, chopped fine)
- 1 Tbsp. preserved lemon (brine, if you used my recipe…because it’s fresh lemon juice and kosher salt, as a substitute use 1 Tablespoon fresh lemon juice and salt to taste)
- 3 Tbsp. sunflower oil
- 3 Tbsp. apple cider vinegar
- 2 Tbsp. pure honey
- 1 Tbsp. fresh mint (chopped fine)
- 2 oz. whipped cream cheese (you might want slightly more to get you pastry bag working but you only use about 2 oz. at the most)
- 4 pinches lavender
- edible flowers (optional, broken down a little)
