- 2 sweet potatoes (large, peeled and diced)

- 2 Tbsp. oil

- 3 cloves garlic (finely minced)
- 1 Tbsp. minced fresh ginger (finely, or ginger paste, see note)
- 1 lb. boneless, skinless chicken breasts (cut into bite-size pieces)
- 1 English cucumber (seedless/, peeled and diced)
- 3 cups baby spinach
- diced avocado
- fresh cilantro (Chopped)
- 1/3 cup fresh lime juice
- 1/4 cup creamy peanut butter (or tahini)
- 2 Tbsp. soy sauce
- 1 Tbsp. sesame oil (or toasted sesame oil)
- 2 tsp. honey
- 1 tsp. chili pepper and garlic sauce (optional, but adds great flavor and a little kick)
- 1 clove garlic (finely minced)
